GRILLED MACKEREL

Preheat the broiler for 15 minutes.  Make 4 shallow incisions about 1 inch apart on both sides of each mackerel.  Season the mackerel with salt and pepper.  Line a roasting pan with foil and put a rack in the pan.  Lay the mackerel on the rack and cook until golden on both sides.  Turn off the grill and leave the fish in the oven with the door  closed for 5-7 minutes to finish cooking.  Serve garnished with the lemon wedges.
